I would suggest that the guidelines are updated to say items written in style that suggests it has been added by the supplier are subject to being revised or deleted.

The other thing I find a little worrying about this is they have put the item into 4 categories [...] which I assume were created by them. Is there any control over the appropriate creating of categories
Nonexistent categories are automatically created when a page is committed. They can be deleted by admins (me and Earle) if they prove to be erroneous. For example last night while doing a demo of the site to some friends I auto-created a kebab category that was wrongly pluralised. That will need tidying up.
